Spinach Salad Recipe


Spinach Salad

1 lb. Spinach (I buy the packaged kind)
1/4 C. Craisins
1/4 C. Pecans (chopped)
1/4 C. Shredded Parmesan Cheese
Garlic Balsamic Vinaigrette

Toss Spinach and desired amount of vinaigrette together. Top with Craisins, Pecans and Cheese.

Garlic Balsamic Vinaigrette:

1 clove of garlic (minced)
2 T. balsamic vinegar
1/2 c. olive oil
1 t. sugar
2 T. Dijon mustard
salt and pepper

With a wire whisk combine garlic, vinegar, mustard, sugar, salt and pepper. While whisking slowly add olive oil. Toss with your favorite salad!

(I came up with this vinaigrette the other night. It was really yummy, but a little heavy on the garlic. I don't mind heavy garlic, but if you do, you might want to cut back to 1/2 clove of garlic. It kind of reminds me of Caesar Dressing.)

Thanks, I can't wait to try it! Do you think it would be good with regular raisins? I don't like Craisins.

I think regular raisins would be just fine. I had leftovers for lunch today! It was so yummy!!!
